How to Prepare

Always when trying new ingredients, especially those from food cultures very different from “family traditional”, that you perform due-diligence in your research.

Culture-of-origin recommendations to transform harmful cyanide compounds:

  • minimum cooking time 15 minutes,
  • cook in an un-covered in a non-aluminum pan,
  • in a well ventilated area.
  • It has been reported that consuming small amounts of un-cooked Chaya under very specific recipe preparations could probably be consumed with no harmful effects. I choose not to consume this plant without cooking.
